Cheap & Easy Mason Jar Lunch Salads #mommymonday

I know you’ve seen mason jar tutorials all over the internet, but I HAD to share with you what I did tonight because of how easy it was!

Here’s what you need:
5 large mason jars
1 can garbanzo beans
1 can sliced beets
1 can large, pitted olives
2 cucumbers, peeled and sliced
1 large head romaine
Favorite salad dressing

I didn’t add dressing to my jars because I keep a bottle of Italian dressing at work. Plus, I like to drizzle it on top of my salad once I dump it all on a plate at lunchtime. These are seriously the easiest, healthy and inexpensive lunch salads ever. And they have vegan protein! I am doing my best to eat vegan with some cheese here and there. I didn’t do great while I was traveling for work last week. It’s tough when I’m eating catered lunches in a conference room. BUT! Today is a new day. And I have a yummy vegan mason jar salad to prove it.

Here’s how you layer from bottom to top:
Divide each of the ingredients by give and start with beans, then cucumbers, then beets, then olives, then romaine. I didn’t even have to buy the greens because I had the lettuce growing in my back yard. Wa-La, your done! And it only took you 10 minutes. You’re welcome.
