I should let you know that I'm a vegetarian for lent. That's right. No chicken. No beef. No breakfast sausage. So I'm getting pretty creative with my meals. So this morning while my littlest was napping and the husband had the other three boys out of the house I decided to create a new recipe for brussel sprouts. When I was little I always thought brussel sprouts tasted like earwax, how should I know since I had never tasted earwax? Oh kids…
Since I'm not eating meat, I need my protein. So I've added almonds to my b' sprouts and they really added a nice nutty crunch. Here's the recipe!
Slice and dice your almonds. Slice and dice your brussel sprouts.
Put 1 tablespoon olive oil in a medium-high warmed pan. Add the sprouts and almonds. Once heated add 1 tablespoon of balsamic vinegar, try to drizzle it over the brussel sprouts. They really start smelling yummy now.
You will know they are done when they are soft and slightly browned. Enjoy with a big glass of water! What a healthy eater you are. 😉
